Yummy 4th Treat



makes 8 sundaes and 60 cookies
FOR THE COOKIES
2 cups sifted all-purpose flour, plus more for surface
1/2 teaspoon baking powder
1/4 teaspoon salt
4 ounces (1 stick) unsalted butter, softened
1 cup sugar
1 large egg
1 teaspoon pure vanilla extract
FOR THE SUNDAES
2 quarts Vanilla Ice Cream, softened
2 quarts Raspberry Sorbet, softened
Blueberries, for garnish
Directions

Make the cookies: Whisk together flour, baking powder, and salt. Cream butter and sugar until pale and fluffy. Mix in egg and vanilla. Gradually add flour mixture, and mix until dough comes together. Shape dough into 2 disks, wrap each in plastic, and refrigerate at least 1 hour (or up to 2 days).
Preheat oven to 325 degrees. Roll out 1 disk of dough to just less than an inch thick on a lightly floured surface. Using a paring knife, cut out spoon shapes, each about 3 inches long. Get the spoon template here.
Transfer to baking sheets. Chill in freezer for 15 minutes. Roll out scraps, and repeat once.
Bake until cookies are golden around the edges, about 12 minutes. Transfer sheets to wire racks to cool. Repeat with remaining dough.
Make the sundaes: In 8 small bowls, layer 1/4 cup ice cream, 1/2 cup sorbet, and another 1/4 cup ice cream. Garnish each sundae with blueberries, and serve with 2 or 3 cookie spoons.

Pacific Coast Camp 2010

What a wonderful time we had. The kids all enjoyed the camp so very much and did NOT want to leave! They said they wished it was another week long! Don't think I could handle 2 weeks of sleep deprivation. The services were so powerfully impacting on each of their lives and some may have even met their soul mates.....at least they feel that way currently!! LOL They came back telling us of other events that are up and coming that they need to start fundraising for. =) Until next year.......

Week of Family FUN!






Spending time at the Oceanside Beach...what a BEAUTIFUL day! It was quite funny when a giant wave came in and wiped us out unexpectedly!!!



Del Mar FAIR day! Every year we spend a day here, normally 4 hrs, this time we spent 8!! We were pretty Faired out for the year! (Out of $$$ too)lol The kids entered artwork into the fair from their school which is displayed throughout the duration of the Fair. (@ 25 days)



Ireland Graduates from Kindergarten

Our little baby girl has made it through Kindergarten and now is on to 1st grade! It's so hard to believe that I will never have another Kindergartner. =( Now on to bigger and more challenging grades!! Ireland was a great student and has really grown up this past year...she's STILL the baby though and knows it AND uses it to her advantage! =) I love you Ireland Grace!!!




Catalyn made Teacher's Honor Roll by getting all A's & B's on every report card. Actually, she only received 1 B and the rest were A's. Yes, I am a proud Mommy!!

Happy Anniversary to my LOVE

Today Stephen & I are celebrating 14 WONDERFUL years of marriage. It's so much fun reminiscing about years gone by and looking forward to years to come. You never know what life is going to deal you...you just learn to roll with the punches and celebrate in the good times. I must say, being married to the one I LOVE has given me a very fulfilled and happy life. I am so very thankful for the man in my life! Yes, he STILL treats me like a gentleman, tells me he loves me EVERY day, tells me me I'm beautiful (even when I feel like I need an overhaul) lol, goes shopping with me (and gives me $ to spend), brings me roses & coffee.....I guess you can see I am still HAPPILY married and in LOVE after 14 years of marriage! So, to celebrate, we took off to Santa Monica for a few days and my sweet sister is being Nanny to my kids!! =) (Thank you Jenn)
